I really want to continue to take some classes after graduation, anything from cooking to photography to art history. Does anyone know where I can find some cheap ones that have cool people in them?

Check out www.Bid2Learn.com ...they have auction based bids for any type of class or course you might need..even certifications from IT to vocational..even legal to healthcare. Great service only one I've seen. They use all the existing colleges and national vendors for their network not just the Internet schools. Good luck!

I've been to a few of their "brown bag lunch lectures" (the schedule is online "here":http://www.moma.org/calendar/programs.php?id=54). Some of them are a bit "out there" but I've found it an excellent use of my lunch break and you do meet some pretty interesting people...
